Salmorejo toast with ham

Both refreshing and nutritional, this is an ideal dish to start any get together around the table with friends. We recommend garnishing the dish with some chunks of hard-boiled egg.

Ingredients

250 g Campofrío ham
500 g tomatoes
100 g stale bread
100 ml olive oil
1 clove of garlic
30 ml Jerez vinegar
Salt

Preparation

  1. Wash the tomatoes and then place all the ingredients in a blender until smooth. Strain to remove any peel and season with salt.
  2. Toast the bread with drops of olive oil on both sides.
  3. Spread the salmorejo across the toast.
  4. Dribble olive oil over the salmorejo.
  5. Cover the toast with Campofrío ham to taste.

Prepare it with

We think salmorejo is best enjoyed with pear tomatoes. This tomato variety brings out the best flavour.
